French Fry Recipe


A scrummy and easy French Fry recipe that is just so delicious


I must admit I'm not particularly a french fry person. That is unless they are light, crunchy and have that delicate seasoning that gets your taste buds crying out for more.

Try this French Fries Recipe as I think you'll be doing it again and again.

Top Tip: The magic secret to a really great french fry is......double frying.

French Fry Recipe

Serves 4

  • 4 -6 large potatoes (Russet, Idaho or King Edward are good choices)
  • Peanut or Vegetable oil
  • Ice cold water
  • Salt /Seasoning of your choice
  • 4 - 5 pommes de terre
  • Huile d'arachide ou végétale
  • Eau glacé
  • Sel /Assaisonnement de votre choix
  • Method

    1. Scrub and wash the potatoes, then cut into chips about 3/8" thick. (Remember the thinner the chips the more oil you'll be eating.)

    2. Plunge the chips into the ice cold water and leave for 30 minutes. This process helps to eliminate the starch and thus stop the cooked chips sticking together.

    3. Heat the oven for keeping the chips warm later

    4. Heat the oil in a deep frying pan to a temperature of around 320C.

    5. While the oil is heating, drain the potatoes and pat dry

    6. Fry small quantities of the chips for about 3 minutes or until they are soft and floppy looking.

    7. Remove from the oil and leave to cool on absorbent kitchen paper.

    8. Continue frying small batches until all the potatoes are done.

    9. Season the potatoes with some salt or seasoning of your choice

    10. Reheat the oil to 375C.

    11. Fry the chips (again in small batches) for another 2 -3 minutes or until crisp and golden.

    12. Keep the chips warm in the oven till they are all done and then serve immediately .

    Suggestion: If you feel that double frying is too much oil for you, a pretty good alternative is to miss out the first frying and instead microwave the cut, raw potatoes for 4 minutes on high. You will still be double-cooking but just not double-frying.
