French Pastry Recipe

Pâte Brisée

fruit tart

This French pastry recipe is really simple and the egg yolk gives a lovely rich element to the pastry.

Having said that, many French people will actually buy French pastry ready made from the supermarket as it's cheap and tastes pretty good. Either way, I think you'll find this pastry recipe pretty quick and simple to make.

Ingredients

Ingrédients
  • 250g plain flour
  • 125g butter
  • Pinch of salt
  • 1 egg yolk
  • Water
  • 250 g de farine
  • 125 g de beurre
  • 1 pincée de sel
  • 1 jaune d'œuf
  • eau
  • Method

    1. Place the flour and salt in a mixing bowl on in a pile on a clean work surface.

    2. Cut the butter into small pieces and rub into the flour until it resembles bread crumbs.
    3. Make a well in the center of the flour and add the egg yolk plus a tablespoon of water.

    4. Using the tips of your fingers, gradually incorporate the flour mix into the egg and water, the aim being to form an evenly mixed, soft and non-sticky ball of dough. if the mix seems too dry add a little more water, a spoonful at a time. If it is too wet add a little more flour.

    5. Wrap the pastry in cling film or leave in a covered bowl and place in the fridge for 30 minutes before you want to use it. If you leave it longer in the fridge, make sure to allow it to come back to just under room temperature before you roll it as otherwise it will be hard to roll.
