This French vanilla ice-cream recipe will give you a truly wonderfully smooth ice cream which is perfect for eating either on its own or as an accompaniment to a fruit tart or chocolate cake.
Plus it is very easy and quick to make.

French Vanilla Ice-cream Recipe

6 egg yolks
100g sugar
400ml milk
100ml double cream
2 vanilla pods
6 jaunes d'oeufs
100g de sucre
400ml de lait
100ml de crème fraiche épaisse
2 gousses de vanille
Method
Put the cream and milk into a medium sized saucepan and place over a medium heat. Scrape the vanilla seeds from the pods using the tip of a small knife and add them plus the pods to the pan. Heat the mixture until nearly at boiling point then remove from heat. Let stand for 30 minutes.
Put the egg yolks and sugar in a bowl and using an electric whisk, whisk until the egg yolks have turned pale and frothy.
Remove the vanilla pods from the cooled milk mixture and add the milk to the egg yolks, stirring all the time
Add the mixture back to the saucepan and reheat, stirring constantly. DON'T let the mixture boil but keep heating gently until the mixture thickens and coats the back of the spoon.
Allow to completely cool and then pour into an ice-cream maker and follow the manufacturers instructions
If you don't have an ice-cream maker, then pour into a plastic bowl, cover and place in the freezer. After about 45 minutes, take it out and give it a good stir to break up any ice crystals that will have formed. Repeat this process every 30 minutes for about 3 hours or until the ice cream is ready to eat.
Tip: Homemade ice cream is best eaten as soon as it's ready but if you want to eat it on another day, make sure your remove it from the freezer for about 15 minutes before you want to serve it. Delicious!
